Bliss Balls, Bombs, Parfaits..Oh My!!!!

Once again my product has expanded. I was trying out a few new recipes and those turned themselves into a whole bunch of new products. This weekend at the market I will be introducing a whole line of protein bombs and energy balls, all of which are gluten free, vegan and mostly raw.
I love the convenience of this product, they are packed full of seeds, nuts, berries, hemp hearts, raw cacao, cacao nibs, raw honey and a whole lot more. They will fill you up and give you that pick up that you need. They are perfect for runners, bikers, hikers and one who works out, busy moms on the go and for anyone who needs a healthy boost.
There are four new varieties to start the weekend off with
-Raw Cacao & Zucchini- smooth and chocolatey with hemp hearts & raw cacao nibs
-Raw Carrot & Cranberry Bomb- Carrot, Cranberry, Sunflower Seeds, Walnuts, Ginger, Cinnamon, Macca
-Organic Peanut Butter Bomb-Peanut Butter, Barberries, Sunflower Seeds, Pumpkin Seeds & Cacao Nibs
-Raw Bliss Energy Bomb- Almond, Dates, Walnuts, Barberries, Hemp Hearts, Coconut & Pumpkin Seeds

There is also a new Cacao & Peanut Butter Parfait which is divine, if you want all the deliciousness of a peanut butter cup but without the guilt, look no further.
These are a soaked raw cashew base, organic cacao  and organic peanut butter and are topped with raw cacao nibs and cacao puffed quinoa.
I also have the decadent raw chocolate mousse which is made with avocado, raw cacao & topped with fresh berries, cacao nibs and pumpkin seeds. This one has turned even the biggest skeptics into believers.

I also have a line of raw fudge and various raw bars, there is a few new ones in the mix as well. I love the combo of caramel and chocolate so there is a new bar this week.
It is a raw cacao and caramel bar, walnuts, coconut & lucuma make up the caramel flavored base while the top is a rich raw cacao fudge frosting. This one hits all the salty sweat notes that I wanted it to.

So in short, this is what is new at Red Earth Kitchen, I still have all of the vegan and vegetarian salads as well as all of the varieties of soups, there is a few new chicken soups as well as some gumbo, which is packed with sausage, chicken & shrimp...

Cashew Cheese

I am constantly working on developing new products for my menu.
I have so many vegan and lactose intolerant customers that I wanted to make something special for them.
This was the first batch of the cashew cheese, I made two, the other is full of fresh herbs and lemon zest while this one is just a bit tangy.
I am very excited about this product, it is not only extremely creamy but it is sliceable and will melt.
This is a perfect accompaniment to crackers, fruit or in lasagna.
They are prefect for anyone who is vegetarian, vegan, gluten intolerant or is following a raw diet.
I currently working on a few other varieties, once those are complete they will be for sale at the Farmers Market and via email.

Wonderful Garden Fairies

There is nothing quite as wonderful as having your very own garden fairy. I was lucky enough to wake up this morning to find a bountiful harvest for me. The most amazing Nasturtium blossoms, tiny delicious raspberries, zucchini and the most aromatic basil around. I am lucky enough to have a friend who has the greenest thumb and nurtures her garden with tender love and care.
So if you are ever in need of lovingly cared for produce, stop by the road side stand in Salisbury and say hi to Sarah Reddy Keenan, she can be your garden fairy too.
Her wonderful nasturtiums are featured in my watermelon salad this weekend and the raspberries made a lovely addition to my raw chocolate mousse.

Finger Licking Good

I know this doesn't go along with my healthy market goodies but this was literally the best fried chicken ever, and a little treat now and then never hurt anyone.
With the help of my youngest brother we whipped up some super crispy moist and juicy fried chicken, add some delicious corn and a cold beer and it was the perfect summer meal!

Sweet Sweet Salads

Over the past three years my menu has grown by leaps and bounds, from starting with four types of soups and a few quiche it now has more varieties then I can count at times.
Every season I have tried to introduce a new product to the line up, last year it was salads, and what started with a few varieties has now evolved into so much more.
I love the spring and summer for the wonderful produce available at the markets and once again Broadfork Farms has provided me with some of the most amazing beets, greens & kale, just to name a few...
